The summer truffles season had begun!
The summer truffle , or Tuber aestivum is a delicate truffle, fresh as an early morning dew. It should be prepared with care and sensitivity, and it will best distill its light taste by using it raw and uncooked. With appropriate recipes you will be able to serve and savour truly exquisite dishes.
This is it ! This is the end !
Last days of the season for Tuber melanosporum, the Black Truffle. I found my last black truffles a few days ago. I let them to Mother Nature and said” see you next year”. We now say hello to Tuber borchii… I will tell you a bit more soon. Good Bye; Claire de Truffes.
