For your first workshop, you will learn the main guiding principles that should be followed when preparing and cooking truffles. You will then practice and learn how to make a perfect truffle butter and a truffled ‘brouillade’ worthy of the name (scrambled egges with truffles). Undisputed great classic dishes, they seem easy to prepare, and indeed they are, but only if you know the appropriate tricks. The workshop will close with the tasting of a truffled surprise gourmet dish.

And of course, the workshop is combined with a tasting session of local wines

Full Day Truffle Workshop (about 7 h)

After learning the main guiding principles that should be followed when preparing and cooking truffles, after having made a perfect truffle butter and the truffled ‘brouillade’, you will enjoy a full-fledged gastronome cuisine course. You will learn and cook 3-4 truffled gourmet dishes. And a fully truffled lunch will be served, including the dishes you have prepared, complemented by truffled dishes prepared by myself. Each dish will have its own wine tasting session, the objective being to find the right Truffle/Wine tuning. I write ‘Truffle/wine’ tuning on purpose for this is the Truffles that I wish to highlight in my cuisine: my gastronome preparations are conceived for supporting and sublimating the truffles, not the reverse. In my workshops, truffles reign supreme…

Half-Day Truffle Workshop (about 3h30)

 

After learning the main guiding principles that should be followed when preparing and cooking truffles, after having made a perfect truffle butter and the truffled ‘brouillade’, you will be exposed to the basics of Truffles cuisine. You will then learn and prepare one of those truffled gourmet dishes (meat or fish, sauce and side dish). A short truffle hunting demo is included (in the field as much as possible, as integrated in the video-projection if local conditions do not allow).

And of course the workshop is combined with a tasting session of local wines for highlighting the cooked dishes.

For the pleasure of the discovery, I always endeavor to make you taste at least two species of Truffle, fresh or/and preserved as ‘truffle butter’ (depending on the season: Tuber aestivum, borchii, brumale, magnatum, melanosporum, mesentericum, uncinatum). I also endeavor to show you other, lesser known, truffles (Tuber excavatum, rufum, etc…).

 

By the end of my workshops, you will be a specialist in the Truffles of France!

You will be able to buy, prepare and cook Truffles. You will not worry anymore about being cheated when buying, nor of being disappointed when cooking: you will know how to recognize and choose good Truffles, you will not worry anymore about spoiling your dish, and you will always please your guests.

 

Last, but not least, my cuisine course is not a cooking demonstration. This is a real course in which you will practice. Our pots and pans are waiting for you!
